
Cheese Souffle Skyr Muffins

Large eggs, separated
3/4 Cup
Icelandic Provision’s 30oz Whole Milk Plain Skyr
3 Tablespoon
Melted unsalted butter
1/3 Cup
All-purpose flour
1 Teaspoon
Baking powder
1/4 Teaspoon
Dry mustard powder or yellow mustard
1/4 Teaspoon
Paprika powder
1/4 Teaspoon
Fine sea salt
1/8 Teaspoon
Freshly ground black pepper
A pinch of nutmeg
1/2 Cup
Parmesan cheese, grated
1 Tablespoon
Fresh chives, chopped
Recipe
Step 1
Preheat oven to 350 °F.
Step 2
Line 6 to 8 wells of a standard muffin tin with parchment liners.
Step 3
Separate the egg whites from the egg yolks. Reserve the egg whites for later.
Step 4
In a medium bowl, whisk together the skyr, egg yolks and melted butter.
Step 5
Sift in the all-purpose flour, baking powder, mustard powder, paprika powder, fine sea salt, freshly ground pepper and nutmeg.
Step 6
Stir in 75% of the parmesan cheese and chives until fully incorporated. Reserve the remaining cheese to top the muffins with.
Step 7
In a clean, dry bowl, beat the egg whites until soft peaks form.
Step 8
Using a rubber spatula, gently fold in the egg whites into the egg yolk mixture just until combined.
Step 9
Scoop the batter evenly into the desired number of muffin cups.
Step 10
Sprinkle the remaining cheese on top.
Step 11
Bake the muffins for about 15-20 until puffed, golden, and a toothpick comes out clean.
Step 12
Serve the muffins while they are hot, they will be the fluffiest when warm! Enjoy them as is or serve them with a light salad or brunch spread.
