
Coffee Pistachio Dark Chocolate Truffle Skyr Bowl
Description
Inspired by the Persian snack Tupak e- khoram, these little truffle bites are made with a whole container of extra creamy Icelandic Provision’s coffee skyr and nuts. These little bites are packed with protein, healthy fats and are naturally sweetened. Top them on coffee skyr and top with pistachios for a delicious decadent breakfast that is filledwith good for you ingredients. Save the extra truffle bites for a sweet afternoon treat!

1/2 cup + 2 tablespoon
shelled raw pistachios , divided

pure maple syrup
3/4 Teaspoon

Recipe
Step 1
Grind up pistachios and almonds in a food processor until coarsely chopped.
Step 2
Add dates, coffee skyr, maple syrup, salt, espresso powder and cocoa powder. Blend the mixture until everything comes together.
Step 3
Using a tablespoon scoop, scoop out the truffle dough and place them onto a plate. Let the truffles chill in the fridge for at least an hour.
Step 4
Chop the remaining pistachios with a knife finely and set aside.
Step 5
Place the cocoa powder in a separate bowl.
Step 6
Pull the truffles out and roll them into balls with your hands.
Step 7
Roll half the truffle balls half in the pistachio and half in the cocoa powder.
Step 8
Serve the coffee skyr in your desired bowl and top with 1 or 2 truffles on top. Top with any remaining pistachios and enjoy!
Step 9
Place any extra truffles in the fridge. They will last about two weeks.
