Oatmilk Peaches & Cream Pancakes

Description

Dairy-free and fluffy, these pancakes are made with a creamy, dairy-free buttermilk using our Oatmilk Peach Skyr. Frozen peaches fold into the batter for soft, golden pancakes with sweet bursts of fruit in every bite.

All-purpose flour

Baking powder
1 1/2 Tablespoon
Sugar
1 Tablespoon
Ground flax seeds
Pinch of salt
Dairy-free buttermilk:
1 1/3 Cup
Dairy-free milk
2 Teaspoon
Lemon juice
1 Teaspoon
Vanilla extract
1/2 of cup
5.3oz cup of Icelandic Provisions Peach Oatmilk Skyr
Stewed peaches:
2 Cup
Frozen peaches
1 Cup
Water
3 Tablespoon
Maple syrup
Toppings:
Remaining 1/2 cup

Recipe
Step 1
Combine the dairy-free milk and lemon juice in a bowl. Set aside for 5-10 minutes to curdle, then whisk in the Peach Oatmilk Skyr and vanilla extract until smooth.
Step 2
Add frozen peaches, water, and maple syrup to a small pot. Simmer over medium heat for ~ 10 minutes until soft and thickened. Set aside.
Step 3
Whisk together flour, baking powder, sugar, flax seeds, and salt in a large bowl.
Step 4
Pour buttermilk mixture into dry ingredients. Gently whisk until just combined - don't overmix! Let rest for 5 minutes.
Step 5
Heat a greased skillet over medium heat. Pour 1/4 cup batter per pancake. Cook 2-3 minutes until bubbles form, flip, and cook 1-2 minutes more until golden. Repeat with remaining batter.
Step 6
Stack pancakes and top with remaining Peach Oatmilk Skyr and stewed peaches.
